This dish is also known as "mushroom masala curry" or "mushroom curry" because the original recipe includes curry over a bed of rice. It is usually accompanied by chapati, but not always. As much of traditional Indian dishes, this mushroom masala is vegan and animal-friendly. Let's check!

Festival Organic Sliced Mushrooms Masala

For the ingredients (4 servings)

  • 2 tablespoons vegetable oil
  • 1 cinnamon stick
  • 1 teaspoon of cumin seeds
  • 2 pods of green cardamom
  • 2 whole cloves
  • 1 star anise
  • 1 bay leaf
  • ½ onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 tomatoes, pureed
  • 1 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ½ teaspoon chili powder, or to taste
  • salt to taste

  • 1 tablespoon cashew powder

For the Preparation:

Step 1

Heat some oil in a medium saucepan over medium heat. Now it's the time to add cinnamon, cumin seeds, green cardamom, cloves, star anise, and bay leaf. Stir for about 30 seconds so that the oil absorbs all of the flavors.

Step 2

Stir in the onion and saute for about 10 minutes until it becomes slightly caramelized. Later add the tablespoon ginger-garlic paste and let it diminish. Add tomatoes and cook for around 3 to 4 minutes.Then, add coriander powder, turmeric, and chili powder and let the sauce reduce. For about 5 minutes. Add some salt and the sliced mushrooms till they are covered with sauce.

Step 3

To turn this sauce into the most delicious masala, finally pour in water and allow mushrooms to cook in sauce until slightly soft for about 5 to 7 minutes. Stir in cashew powder and garam masala and let it stew for 2 more minutes. Remove from heat, serve and enjoy this tasty Indian classic.

I often use fresh mushrooms in cooking, but they are not always available, you know? I use them for spaghetti sauce or pizza or stew, so from time to time I need to buy them canned. Creamy Vegan Organic Organic Mushroom Stroganoff

Stroganoff is a traditional Russian dish normally prepared with meat and dairies. This vegan version of Stroganoff with Giorgio's organic mushrooms will make your water mouth! And you won't believe how tasty and easy to prepare this is. Let's see...

For the ingredients (5 servings)

  • 4 – 5 tablespoon vegan butter
  • 1 small yellow onion (or large shallot). It should sliced finely.
  • 3 minced cloves garlic
  • 2 cans of Giorgio's sliced organic mushrooms
  • 2 tablespoons flour
  • ¾ cup dry white wine
  • 1 ¼ cup low-sodium vegetable broth
  • ½ – ¾ cup vegan sour cream
  • 2 tablespoons chopped parsley, plus more to serve
  • salt + pepper, to taste
  • 12 – 16 oz. pasta (use your favorite!)

For the preparation:

Step 1

Cook the pasta according to package directions until al dente. Drain and reserve some of the pasta water.

Step 2

Stroganoff: First, heat the butter in a medium pot over medium-high heat, add onion and fry until golden, that will take more or less 5 minutes. Later, add the garlic and the 2 cans of organic mushrooms. Cook another 5 minutes. Now, add the flour (we recommend using a whole some version, instead of regular white flour), stirring to fully incorporate and white streaks. Let the flour cook for around 1 minute. Stir in the wine and broth and allow the preparation to gentle boil at medium heat for another 5 minutes or until the sauce has slightly thickened. Now pour in the sour cream and parsley. Season with salt and pepper to taste. And don't forget to keep it herby!

Step 3

Now you just simply put all together: add the pasta to the mushroom sauce and toss gently a little bit. If your sauce is to thick, you can add some pasta water to loosen it up. Alternatively, put the pasta into individual bowls and cover ir with the sauce on top. Serve and enjoy!

For the ingredients:

  • 650g of fresh Back to Roots organic mushrooms in quarters.
  • 50g melted butter melted (don't let it cool!)
  • 2 - 3 minced garlic cloves (I use 3 because I like it garlicky!)
  • Salt and pepper
  • 1.5 tbsp olive oil

RICE:

  • 1 1/2 cups long grain rice
  • 1 1/2 cups vegetable broth , low sodium (it can be home made!)
  • 1 1/4 cups water
  • 1 tsp dried thyme
  • 1 tsp garlic powder

For the preparation:

  1. Preheat oven to 180C/350F.
  2. Put the organic mushrooms in a large bowl. Pour over the melted butter, add garlic, salt and pepper to taste and toss well.
  3. In a baking pan (not too large) and place all the rice ingredients.
  4. Mix and shake the pan to spread the rice out evenly.
  5. Lay the mushrooms over the rice - they will be partially submerged but should these amounts are right to cover all of the rice!
  6. Pour over some olive oil.
  7. Bake for around 35 - 40 minutes or until mushroom is golden. Remove the pan from oven and let it rest for 5 minutes.
  8. For the serving: add extra butter (if using) and spring onion. Toss the rice again. Serve and enjoy!
